牛肉炒面 beef noodles

牛肉炒面-Beef Noodles


当我尝到第一口炒面的时候,眼睛立刻睁大,
惊呼:“喔~ 这也太好吃了吧~~~~~~”
我老公他也是,
边吃边不住的讲了无数个好吃!

真的太幸福了啦~~~~~~~

“老公,

让我们为这好吃的牛肉炒面,
手拉手快乐转圈圈吧!”

现在我明白了,
一道好吃的炒面,
最重要的是所选用的油!

因此蒜头油在这里扮演了举足轻重的角色!

材料:
快熟面:6片;花椰菜:半个; 青葱:绿色部分,1大把切段; 洋葱:4个切块; 
牛肉:300克,腌料(酱油2匙,米酒1匙,糖1小匙, 1/2 小匙苏打粉);

蒜头油:1小碗, 约200ml;

调味料:
酱油3大匙,黑酱油1大匙,糖1小匙,盐1小匙

Ingredients: 
6 pieces of instant noodles
150g cauliflower, cut into florets
100g spring onion, cut into 3cm length
4 onion, peeled and sliced
300g beef, sliced thinly, (marinade:  3tbsp light soya sauce, 1tbsp dark soya sauce, 1tsp sugar, 1tsp salt, 1/2tsp bicarbonate of soda)

about 200ml garlic oil;

seasoning: 
3tbsp light soya sauce;
1tbsp dark soya sauce; 
1tsp sugar;
1tsp salt.

做法: 
1. 先将牛肉片和腌料拌匀,腌30分钟;
2. 快熟面,六片. 烧开一锅水,把面条加入滚水中焯烫1分半,用筷子把面弄散,滤水盛起;
3. 蒜头油的制作:蒜头:一个半,切末.热油,倒入蒜末,中小火把蒜末爆香成蒜油,盛起备用;
Method: 
1. mix beef with marinade and marinate for 30 minutes;
2. blanch instant noodles in boiling water for a short while, about 1and half minutes, dish and drain;

3. 锅中倒入蒜头油2大匙,油温热后,加入洋葱块,牛肉块及腌肉汁,中大火炒香;
4. 然后加入花椰菜翻炒均匀,接着加入快熟面翻炒,把剩下的蒜头油倒入到面条中,继续翻炒;(炒面条的时候可以一手拿筷子,一手拿锅铲辅助着翻炒,这样受热才均匀)
5. 加入调味料继续翻炒,最后把青葱段加入快速翻炒即可.

小贴士:1/2 tsp 苏打粉可以让腌过的牛肉更加爽脆可口; (我没放)

3. heat up 2tbsp garlic oil, add in onion and beef together with the marinade sauce, stir-fry in medium to high heat until fragrant; 
4. add in cauliflower stir well, then add in step2 all the noodles stir well;
5. pour in the rest of the garlic oil and seasoning stir fry at medium to high heat until well mixed, at the last, stir in spring onion, mix well and dish up;

note: bicarbonate of soda can make the beef more tender; (but I omitted)
 

6. 吃的时候,别忘了散上些许的爆香蒜末渣,还有挤半个酸柑汁淋在上面哦.......
    唉哟哟.......那满嘴的蒜油香啊!~~~

6. sprinkle fried garlic and squeeze half of lime juice on top,  serve hot.
